Summer Sizzles With Susan's Salsa
Posted on 08/10/2015

It’s blazing hot here in Plano, Texas and we at Curry Orthodontics have a delicious salsa recipe that's sure to put a smile on your face. It can be used on anything Tex-Mex, on chips, on scrambled eggs, on rice or mixed with avocado to make guacamole. Best of all, it's braces-friendly, too! We have delivered our famous salsa to referring Plano offices for Feliz Navidad and to friends just for fun. But now, we'd like to share our recipe with all of you! It’s easy to make and will keep in the refrigerator for several weeks. (Warning: the parent of a former patient asked for this recipe recently, but it didn’t last long enough to make it to the party where she planned to serve it:) Try it and let us know what you think!

Susan's Salsa

1 28 oz. can of whole peeled tomatoes

1 jalapeno pepper chopped

Juice of 1/4 lime

Handful of fresh cilantro leaves

2 tsp. salt

1 tsp. sugar

1 clove of garlic, coarsely chopped

1/4 onion, coarsely chopped

  1. Pour the contents of the tomato can into a blender. Do not drain juice.
  2. Cut off the ends of the jalapeno pepper and discard them. Then chop the pepper into slices leaving the seeds in. For more spice, select a pepper that has cracks in it.
  3. Rinse and cut off extra stems from the cilantro leaves.
  4. Put the rest of the ingredients into a blender and process to desired consistency.
  5. Pour salsa into jars and refrigerate.
  6. Enjoy!
